Chef TJ has a passion for both West Coast and Asian cuisine. His culinary curiosity began with his roots in the Philippines and has taken him as far away as kitchens in Taiwan and Chile. Organic, local, and sustainable ingredients are the highlight of his dishes.
Chef Bruce’s love for cooking grew from a passion for creating and learning new techniques, and he finds inspiration through seasonal ingredients with a focus on sustainability. Bruce sees artistry in the details and is committed to telling the story of the process and ingredients that go into each dish he creates.
Together ono Vancouver’s Chefs Bruce and TJ tap into their 20 years of experience in the culinary and F&B experience to provide unique private dining experiences to foodies as well as help local food establishments like The Delly UBC stay in tune with food trends and profitability.
Since 1976, the Delly sells a very large assortment of fresh sandwiches, wraps, soups, salads, and an assortment of pastries for UBC students and faculty alike.
